DESCRIPTION
“Gianduia” is a type of chocolate mixture created in Turin in 1806 by ingenious chocolatiers who, during the Napoleonic blockade, replaced the now very expensive cocoa with the Tonda Gentile hazelnut from the Langhe.
Enrico Rizzi's Symphonies are sometimes inspired by "classic" combinations, such as the pairing of almonds and candied citrus, but always add a personal touch. In other cases, however, they combine seemingly distant and unusual, if not unique, ingredients, such as caramel, cocoa beans, and Maldon salt.
