  • WILD SALMON , from the pristine rivers of Alaska, smoked over a slow burn of a blend of aromatic woods.
  • PECORINO DI FOSSA , from Sogliano al Rubicone, aged for three months in the typical pits where the refermentation gives it a particular aroma.
  • BLU DEL MONCENISIO , a rare cow's milk blue cheese, born on the border with the Susa Valley, is characterised by its bluish veining with light notes of stables and pennicillo.
  • FOIE GRAS , fatty goose and duck liver in a balanced blend, with a delicate, creamy and slightly spicy flavour.
  • TRADITIONAL BALSAMIC VINEGAR from Modena DOP aged for 12 years in chestnut, mulberry, juniper, cherry and oak barrels.
  • WHITE TRUFFLE , of particular value and with an unmistakable intense but gentle, velvety but decisive flavour, for a pleasantly aromatic macaron.
