DESCRIPTION

A perfect fruit tart: a crisp, thin pastry crust, a rich, enveloping custard made with two vanilla varieties (Madagascar and Tahiti) and a generous cascade of berries.

Ingredients
  • Shortcrust pastry: WHEAT flour type 00, BUTTER (82% fat), granulated sugar, icing sugar, ALMONDS, pasteurized EGGS, lemon, salt, Madagascar vanilla.
  • Custard (30%): whole MILK, pasteurized EGG yolks, granulated sugar, CREAM (35% fat), rice starch, pectin x58, salt, Madagascar vanilla, Tahitian vanilla.
  • Mixed fruits (30%): strawberries, raspberries, blueberries, blackberries.
  • Neutral gelatin: Abrigel neutral gelatin (sugar syrup: glucose-fructose syrup, cane sugar and water, apricots, gelling agent: pectin, acidifier: citric acid), water.
